Laba Festival falls during the depths of winter every year. The most popular meal in the festival is Laba porridge, a specialty that is usually made with at least eight ingredients which represent the people's prayers for harvest.

腊八节在每年的深冬来临,这天最受欢迎的食物是腊八粥,它是一种至少用八种食材熬制的粥。人们在这天吃腊八粥,用以祈求丰收。

Ingredients 用料:

Cereals 谷物

1 cup of mixed glutinous rice, sorghum rice, black rice, barley, oats

一杯混合谷物,包括糯米、高粱米、黑米、大麦、燕麦

Beans 豆类

1 cup of mixed red beans, black soybeans, kidney beans

一杯混合豆类,包括红豆、黑豆、芸豆

Nuts & dried fruits 坚果和干果

1/2 cup of mixed peanuts, longans (peeled off), raisins, Chinese dates

半杯混合坚果和干果,包括花生、龙眼(去皮)、葡萄干、红枣

Others 其它

2 tablespoon of crystal sugar, 7-8 cups of water

两勺冰糖、7到8杯水

Steps 步骤:

1. Wash cereals & beans, soak for 3-4 hours in advance.

用水淘干净谷物和豆类,提前3到4小时泡好。

2. Wash nuts & dried fruits, set aside.

用水淘干净坚果和干果,备用。

3. Add cereals, beans and Chinese dates in a pot and fill with 7-8 cups of water.

将谷物、豆类和红枣放入锅中,加入7到8杯水。

4. Bring to a boil; simmer for 60 minutes over low heat. Constantly stir to prevent burning.

等火煮开,再用小火熬60分钟。煮的时候要不断搅拌以防粘锅。

5. Add in nuts, dried fruits and crystal sugar. Continue to simmer for 30 minutes.

加入坚果、干果和冰糖,继续小火熬30分钟。

6. Turn off heat. Leave for 10 minutes, serve with vegetable dishes.

关火晾十分钟后,即可就蔬菜食用。

Tip: This porridge can be cooked the whole year round. You can add mung beans or Lily bulbs in the summer to clear away the summer heat.

提示:腊八粥一年四季都适合吃,在夏天可以另外加入绿豆或百合以消暑。
